Guillermo Pernot's ¡Ceviche! boldly expands the traditional recipe for ceviche in 48 variations to encompass a world of flavors. Pernot's signature recipes from his Philadelphia restaurant, ¡Pasión! , are a fusion of Latin American and Asian cuisines.
